Back in March 2020, architect Elizabeth Roberts, 53, suddenly found herself running her Brooklyn-based business from an unheated, uninsulated old barn on her property in Bellport, Long Island, where she, her physician husband and their teenage son had decamped to ride out the pandemic.

But after six months of typing emails in frigid and roasting temperatures, and being the only one of her staff available to take meetings with, say, the tile grout guy in East Hampton, she was dreaming of setting up a compound—one where her employees could stay over if needed by clients who increasingly have projects outside of the city, where her California-based mother could safely visit, where artistic friends could retreat to concoct projects and where Roberts herself could sketch, play...
