Professor Tim Spector has said there is a superfood that is 'underrated' that is not only good for your health but also the environment - and it is something we should be eating more of
Health food guru, Professor Tim Spector, has highlighted an "underrated" food that he believes we should all be incorporating into our diets for a healthier lifestyle and to promote environmental sustainability.
Professor Spector described the realisation of their health benefits as a revelation, leading him to include them in as many meals as possible. Beans and pulses are rich in fibre and protein, offering a unique blend of vitamins, minerals and other nutrients not found in fruits and vegetables. While you can consume as many beans and pulses as you wish, they only count as one portion towards your five a day.
"They're anti-inflammatory, anti-obesity, anti-carcinogenic, neuroprotective, and are also involved in our immune response. I changed my meals and I now eat many more of these beans and pulses and lentils and I often just find myself adding them to foods that I have already made. All of these are very accessible, very cheap, very good for the planet and they make all your food taste even better.", reports Gloucestershire Live.
Peanuts and soya beans stand out as exceptions; they're classified as legumes due to their higher fat and lower carbohydrate content compared to other members of the legume family. Prof Spector acknowledges that there's a bit of snobbery around eating canned foods, despite many beans being stored this way.
