A great alternative for any veggie guests you have over for Christmas dinner
You may not be tucking into the classic turkey and ham, but being vegetarian doesn’t mean you have to compromise on a delicious Christmas dinner.
Here, Denis Cotter, owner of acclaimed vegetarian restaurant Café Paradiso in Cork, shares one of his favourite dishes for a festive feast - Braised Turnip Galette of Chestnut & Portobello with Beetroot Port Gravy. “This is a Paradiso classic that makes an impressive Christmas main course that contains wonderfully warm and comforting seasonal flavours,” he tells RSVP.

There is a lot of work in this but all of the parts can be prepped the day before or early on the day, and then finished just before serving.
