1½ cups sifted confectioners' sugarSift together flour, salt and baking soda.
Using an electric mixer, beat together shortening, cheese and cream cheese. Gradually add sugar, creaming well until light and fluffy.Roll out on lightly floured board to 1/16-1/8 inch thickness. Cut into rounds with 2-inch cutter. Place on ungreased baking sheets. Bake 6-8 minutes until edges are delicately browned. Immediately transfer to wire racks and cool completely.Cookies can be put together in pairs, using ½ teaspoon icing. This works best if cookies are rolled thinner. If you make them slightly thicker, use icing to cover tops, or drizzle decoratively.Tester’s notes: We were told Cheddar Gruyere cheese was available at Kroger and Aldi, but neither Kroger by us carried it so we shredded a mixture of both Gruyere and cheddar.
