Screen Time can simplify your iPhone or iPad's interface.“My mother can use her laptop computer fairly well, but lately she was getting into password issues and other things which are becoming more confusing for her.
“Do you know any way to restrict things so she can just check her email, go into her apps or go onto the Internet with Safari to look around? To help your mom simplify her use of the iPad, you should look into the various options inside iOS and iPadOS Parental Controls, most of which can be found in the Screen Time settings.
All you should have left are apps she uses and the Apple default apps, like Mail, Stocks, App Store, News, Health, etc.
