Katie Cantwell's Culinary Journey: From Family Dinners to Restaurant Innovation

Opinion News

Katie Cantwell reflects on the importance of food and hospitality in her life. She advocates for greater recognition of the hospitality industry as a long-term career and the need for fair wages. Cantwell also praises the collaborative spirit of her restaurant team and the joys of shared dining experiences.

Katie Cantwell shares her life in food, from her earliest memories to her favourite flavours and culinary inspirations. What does food - sitting down to a meal with friends, mindfully preparing a meal, nourishment, etc - mean to you?

Food for thought - What are some areas for improvement within the Irish food/restaurant/hospitality scene? The industry also needs greater recognition as a long-term career. Hospitality offers opportunities in leadership, entrepreneurship, sustainability, technology and creativity, yet it is still too often viewed as a temporary job rather than a profession. Investing in training, mentoring and career development will be critical to attracting and retaining talent.

Even just mentioning to students that it is an option as I do not feel that it is part of the discussion for Irish teens. Beyond getting the right personnel, we also need to be able to pay people living wages. As a public, we have become accustomed to expecting restaurant-quality food at supermarket prices. The reality is that fresh ingredients, skilled people and genuine hospitality all come at a cost.

If we want independent restaurants and food businesses to thrive, we have to recognise the value of what goes into every plate. Our head chef and team in Peaches Brasserie did a tasting of our summer dinner menu recently. Everyone grabbed a fork and sampled loads of amazing dishes. The experience allowed us to all try a number of delicious bites and come together as a team.

Compliments to the chef - Now's your chance to sing the praises of a talented chef, beloved restaurant or particularly talented foodie family member. I really enjoy working with our two head chefs, Micheal and Loic, along with our restaurant chef teams. Everyone is incredibly inspiring. My mom and my dad both cooked growing growing up.

I really appreciated having two parents who cooked and allowed me to share in the experience with them. I believe the perfect dining experience starts with people. After that, I really love dining experiences that allow you to choose your own adventure; try a bunch of delicious dishes. So that could be the result of nice friends and family who allow you to share their order (thank you to everyone who puts up with me!

) or a meal served family style. Finally, I love meals that contain a lot of plants, preferably seasonally grown
