The New Yorker who swapped cooking for Kanye West for a 'much better' life in Lancashire
As the nights get darker and colder climes beckon, you could do a lot worse than head down to one of Lancashire’s gorgeous artisan markets for a last ditch grasp at summer.
It’s his first time here, says Wayne, and despite all of the current economic and political upheaval in the UK, he finds a better quality of life here - which he puts entirely down to the existence of the NHS. He says: “It's pretty good here, isn’t it? I've been a chef for 30 years and I developed all these sauces, starting in New York.”
The New York native’s culinary talents have been snapped up in the Ambassadors’ Lounge at Manchester United FC, as well as at various hospitals around the region, which he loves - “It gives me a good feeling,” he says - as well as at the delights of today’s artisan market in Ormskirk, where he’s selling a delicious array of West Indian spicy and robust gourmet chilli pepper sauces, all made from organically grown, UK chillies.
Yet business is slower over at Prestwich Gin, an award winning, luxurious craft gin stall. Michael Scargill puts it down to the ‘in between’ season stretching between the end of summer and Christmas, rather than the cost of living crisis.
He admits, to Lancs Live, that he has to tell people not to bait their dogs to ‘go for the owls,’ adding: “People bait the dog to see if it will go for the owl. But then when the dog goes for the owl they're surprised.”
