In a medium to hot oven, shallow roast the potatoes with a thick slice of shop goose fat in a roasting tin.Then prepare both chickens by cooking gently in a frying pan using olive oil until golden brown in colour, tenderising with shallots, peeled as much as you can.
Break the legs and the wings from the bird torso after putting in the roasting tin, along with the baby potatoes until all nicely cooked through and the potatoes are crispy.Drain the juices from the pan and mix together with saffron and rosemary to make the main gravy for the bird casserole. After removing the wings and legs from the chicken and plucking the breast pieces, pour the gravy over.
