Our reporter amyfentonjourno shares her mum's recipe that's both filling and cheap at less than 65p a portion!
When I was little my mum had a bank of 'go to meals' which she could serve up quickly and easily for tea after my sister and I got home from school.
When my daughter, who is now seven, first began eating solids I found the inspiration online was far more faff than function and mashed avocado or mini quiches weren't exactly cheap either. And that's something which can become incredibly frustrating when most of it ends up on the floor or in a bib.My mum suggested corned beef hash and it quickly became one of our favourites. The soft texture, inclusion of veg and speed it can be made meant that it suited both myself and my toddler.
Here I share my mum's recipe. Be thankful I'm not sharing her self-named 'hunt the meat' which was basically broth leftovers where you literally had to hunt for any morsels of meat!
