Inside Good Luck, I asked Cho to order her favorites at the counter. Unsurprisingly, she included multiple orders of har gow among the nine other items we happily feasted on with paper plates and plastic forks in the small dining area next to the kitchen. “This dough is super delicate because there’s no gluten,” Cho explained, adding how the humidity in the air and temperature of the dough water can also affect its finicky nature. “It’s just starches. It doesn’t stretch.”
While it had been years since Cho had eaten Good Luck’s dan taat , we decided to go for it. After one bite, Cho had a food revelation.
