Shrove Tuesday - now better known as Pancake Tuesday - is most significant in all cultures that observe the Lenten period. It’s also known as Fat Tuesday or Mardi Gras in France, Brazil and New Orleans

It’s Pancake Tuesday today, when the whole country goes flippin’ mad. Whether it’s crepes, or fluffy American style pancakes; whether you favour sweet or savoury, most of us will enjoy the delicious tradition today.

The “Shrove” in the title refers to the old verb “shriving” which broadly means confessing. "Shrove” comes from a Roman Catholic practice. To ‘shrive’ meant going to confess your sins and being absolved by a priest. In the past, a ‘shriving’ bell was rung on Shrove Tuesday to call people to church to confess their sins before Lent began.

These days, our Lents are not as strict, and people may give up chocolate or coffee for the duration. But we still make and enjoy the pancakes. .“It takes a bit of practice to get the knack of it. Use the right pan, the lightest one you have and make sure it’s hot - a common mistake is not having it at the right heat.

Most butters now have such low salt content, some salt is needed to bring out the flavour.Melt a tablespoon or two of butter into the batter to ensure it comes smoothly off the pan. Use half milk, half water for lacier pancakes.
