What I eat as a 28-year-old teacher making $50K/year in Providence, Rhode Island.
I am Muslim, so I don’t eat pork. I drink alcohol very rarely. Food allergies are the bane of my existence; I can’t eat gluten, garlic, almonds, hazelnuts, jicama, jackfruit, cherries, or kiwi.I’m always buying kefir, yogurt, granola, coffee, half and half, arugula, mushrooms, bananas, rice cakes, dates, eggs, deli meat, rice, and lentils.I typically eat out one to three times a week.My family would have “Junk Food Mondays” when my parents would go to a fast food restaurant and pick up dinner.
I decided over the summer to stop buying expensive coffee beans from my favorite shops and save time by purchasing premade iced coffee. I can’t lie…the Starbucks Blonde Roast iced coffee with Trader Joe’s Pumpkin Pie Spice and extra cream is so good.The contract in this school is great. I have a guaranteed “prep level” every day, or time to plan, prepare, and grade. I eat green grapes that I packed last night at my parent’s house. My mom’s secret talent is picking the best grapes.
I am usually home before 2:00 everyday. When I get back, all of our plates are in the dishwasher so I use a bowl to heat up some Mi Niña Spicy Chipotle Lime tortilla chips and Cabot cheddar cheese. Once in a while, I need to eat something really unhealthy after school to make me forget all of my frustrations from the day.Saturday is when I typically try to get my shopping for the week done; my partner and frequent the farmers market near us.
