Christmas is always a time to gather with friends and family, and who doesn’t love a festive tipple to celebrate the season? And while it’s the season of indulgence, it’s always great to have some lighter cocktail options up your sleeve.
An easy way to add a refreshing and delicious flavour to your cocktails this Christmas, with a welcome health boost is.
Once the raspberries and rhubarb have broken down, remove from the heat and strain through a fine sieve into a clean pan. Add in the sugar, and return to the heat. Bring to the boil, whilst stirring frequently, then reduce to simmer for 5 minutes. Remove from the heat, then pour into a glass jar and allow to cool. For a thicker syrup, simmer for longer but this consistency works perfectly for this cocktail.
To make the coconut sour, add all of the ingredients into a blender and blitz a couple of times until the cocktail is pale, frothy and has increased in volume.
